dsc_0818Afrankangle (thanks for the very early encouragement) wrote in and brought up the issue of pairings.  I’m definitely all for drinking wine/beer with cheese, but I do wonder where the concept of pairing originates.  What are the historical and  cultural origins of “the pairing”?  Does it develop with the emergence of restaurants (e.g., the tasting salons of late 19th century Paris)?  Does it develop as a defining quality of “the gourmand”, something that separates “the gourmand” from the rest of us unrefined slobs.   Is it just a fun way to uncover new tastes?

Where does your interest in pairing come from?  Love to hear from folk on this.
